Aval Laddoo - Atukula Laddoo - Poha Laddoo - Rice Flakes Laddoo
Yep! You guessed it right. This is my entry to JFI: Special edition by VEE of Past, Present And Me. This Diwali, I wanted to try something different in the sweet arena. Back home, the usual stuff made during this festive season range from adhirasams, halwa, Boondhi laddoo to badhushas and the like. I neither have the tools nor the patience to make all these, but my DH has quite a sweet tooth for laddoos. So, not having the heart to disappoint him, I went hunting for an easy way to make laddoos. That was when this recipe struck my eye or rather ear I should say, having got it from my mom over the phone. :-) Simple, easy and delicious is the way to describe aval laddoo.

Over to the recipe now..

Recipe:

Ingredients:

Aval/Atukulu/Poha/Rice Flakes - 1 Cup
Sugar - 1 Cup
Broken Cashews - 1 Fistful
Pistachios - 1/2 Fistful
Cardamom - 2
Dry grated coconut - 2 to 3 tablespoons
Hot Melted ghee - Around 8 to 9 Teaspoons

Roast rice flakes till golden brown. Grind together the roasted rice flakes, cashews, pistachios, sugar, cardamom and the coconut into a fine powder. Add hot melted ghee to the ground mixture and shape into laddoos. Ghee helps to keep the shape of the laddoo. Adjust the quantity of ghee accordingly.

Take care not to burn the rice flakes. You can add more coconut and more nuts as per your taste.

Oh, I forgot to mention, my DH loved it and I am wondering if I should make another batch, as this one's not gonna last till Diwali day!

Hey Chandrika.
Delicious looking laddo's. I was talking to my sometime back about them. I never heard of these before and so was askinig her if she new. T he answer was a NO there too, and when I told her how simple the recipe was she asked me to try them out for Deepavali !! I reallu might, as of now I dont have any plans, its really boring to be sitting in the kitchen cooking all this stuff with no one around !! could I come over instead :-)

Chandrika, I tried this yesterday and liked it. Once it is made into laddoos, it doen't taste like Poha anymore. Tastes a bit similar to Avaloseunda, if u know what that is.Thanks!!

Hi Chandrika,

I loved how this laddu looked...and tried it. But I found it very hard to bind it and make round balls until i added a lot of ghee. And then my husband said it has too much of a ghee taste. It is also very flimsy and prone to break anytime. How did you manage to make those laddus so well and perfectly round?
